Rhubarb Custard Pie



What is nicer in the spring then a fresh rhubarb pie?


Picked just this morning from my garden.


Recipe;


1 unbaked 9 inch pie crust


2 and 1/2 cup chopped rhubarb


2 eggs beaten


1 to 1/2 cup white sugar


Mix rhubarb , sugar and eggs together .


Can add 1/2 tsp vanilla or cinnamon as well.


Bake at 425 for 15 minutes then decrease oven temp. to 375 for 40 to 45 minutes . Top with vanilla ice cream or whipped cream if you like.


I like it plain.
