Chocolate no bake Macaroons by Brittany


This cookie was the first cookie I ever made... It remains a favourite til today.
At this time of year with the heat and humidity who wants to turn on the oven. Still it is nice to fill the cookie jar.
This cooks on the stovetop in just  2 minutes.....

Ingredients:
1/2 cup butter
1/2 cup milk
1 1/2 cups white sugar
1/2 cup cocoa
1 1/2 cup coconut
1 1/2 cup rolled oats\
pinch of salt
1 tsp. vanilla


Combine butter, milk, sugar and cocoa, over  medium heat  stirring constantly  bring to a rolling  boil .
Boil hard for  2 minutes , remove from heat.
Add remaining ingredients.
Drop by teaspoons or larger if like onto waxed paper .
Chill in fridge. Store in airtight container. Makes about  2 to 3 dozen.
This cookie had a nice chocolately taste almost  candylike.. great for  a summer treat when the heat is on .

That sounds like such a treat. I love chocolate - who doesn't and coconut - anything coconut will do. I will print the recipe and make these soon.
