At one time this jam was called Sunshine Jam so who could pass up making this jam.
This old fashioned recipe has been around for years... uses strawberry jello, intriguing!
5 c. rhubarb, cut up
4 c. sugar
1 (20 oz.) can crushed pineapple
1 6oz. pkg. strawberry Jello
Boil rhubarb, sugar, and pineapple for 20 minutes, stirring constantly. Remove from heat, add Jello and stir until dissolved. Pour into sterilized jars and seal. Freeze jam.
Makes about 6- 8 8 oz. jars or 16 4 oz.
This jam is easy to make , about 30 minutes, has a nice flavour. Yes it is high in sugar but what jam isn't,
On a cold snowy day in mid winter the name alone should give a taste of spring to come.

You're inspiring me to get out and pick my rhubarb (hope it's not too late) and make some of this wonderful jam!

Mmmmm, I too want to try this recipe.
Hope you do try this jam it is surprisingly good. I ended up with 6 8 oz. jars and 4 4 oz. jars. Gloria my neighbour who made this jam with cherry jello ended up with 9 jars..
