Glazed Whatever fruit you have Lemon Streusel Muffins

This recipe came from my strawberry farm tour;they used sliced fresh straw berries but I decided to try it with a combo of blueberries and raspberries..........When I read the recipe thought it seemed a bit of overkill with not only streusel but a lemon glaze but since I love both ...had to try it.
Ingredients:
Muffins;
1 1/2 c. flour
1/2 c. white sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4. tsp. salt
1/2 c. milk( used sour cream I had to use it up before due date)
1/2 c. melted butter
1 egg
1 1/2 cup fruit.(whatever you have)half blue berries half raspberries is what I used.
1 tsp. grated lemon peel

Streusel Topping;
1/2 cup chopped pecans
1/2 cup brown sugar
1/4 cup flour
1 tsp. cinnamon
1 tsp. lemon peel
2 TBSP. melted butter
Combine streusel ingredients together.

Lemon Glaze;
1/2 cup icing sugar
1 TBSP. lemon juice
In small bowl combine sugar and lemon, stir til smooth.

Preheat oven to 375, Prepare lemon streusel topping. Set aside.
In bowl combine,milk egg, and butter. In another bowl combine flour, sugar, baking powder, cinnamon and salt. Stir dry ingredients into wet ingredients til just combined. Fold in fruit and lemon peel. Spoon into muffin cups. Sprinkle with streusel.Bake for 20 to 25 minutes.Remove from pans , make lemon glaze , while muffins are still warm drizzle over muffins...

These muffins are full of flavour, moist, tender....... do I think the lemon glaze was necessary? no, but oh my, does add another layer of taste..

I made a similar muffin at work today........in my new job as baker! Yay for me. I didn't add the streusel but it sounds good. I did put a lemon glaze on top though.

Oh, I like the idea of using what ever fruit you want in these.
