Comfort Cookie

Every once in a while I get a craving for a childhood cookie. This cookie combines 2 of my favourite flavours, peanut butter and chocolate. Yes, it is the simple peanut butter cookie with chocolate chips.
What is different is the baking method I use.I follow the method Mrs. Fields "I love Chocolate Cookbook" recommends.
This method keeps the cookie tender, moist and evenly cooked through. The cookie bottom is not over baked. I find these cookies seem to stay fresher longer tho not that they stay in the cookie jar long.

Peanut butter Chocolate chip Cookies
2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp. salt
3/4 cup dark brown sugar
3/4 cup white sugar
1 cup butter(or butter flavoured Crisco)
1 cup peanut butter
2 eggs
2 tsp. vanilla extract
2 cups chocolate chips
Optional; 1/2 cup peanuts
Preheat oven to 300.
Sift together flour, soda and salt. In bowl, beat together, sugars, butter, peanut butter then add eggs and vanilla mix til light and fluffy.Add flour mixture. Gently fold in chocolate chips and peanuts if using.
Shape into 1 inch balls pressing slightly with fork.
Bake for 15 to 20 minutes until just set but still soft.
Cool on a wire rack . Makes 4 - 5 dozen
