Sunday

Here it is a very cold Sunday, probably the coldest of the season so far only -11C.
It is also my last day of a " babysitting" . Silly name when one is a teenager and one soon to be.
One forgets how busy kids are . Good kids they are just always going, doing something.
It also points out how set in my routine I am. It is good to break the daily drudge every once in a while.
This morning made pancakes for breakfast with real Canadian Maple syrup
The boys helped clean up the house,then we tackled homework and studying for exams next week. Off to hockey this evening. Mom and Dad arrive back later this evening.
I will miss the closeness of spending 24/7 with the boys.

The pancakes I made from scratch is the best recipe I have ever come across for pancakes. Brother-in-law Keith's recipe is light ,fluffy and flavourful.The recipe has no oil in the batter and I think that is why they turn out so fluffy and light.

KEITH'S PANCAKES
1 cup milk
1 egg
1 cup all purpose flour
1 TBSP. baking powder
1 tsp. salt
Mix dry ingredients, in separate bowl beat egg and milk, add egg mixture to flour mixture. Mix lightly until just blended, will be lumpy. Our batter onto hot lightly greased pan turn only once.
Makes about 10 pancakes.
Options:
Blueberries, strawberries, apple slices, cinnamon ,
Add fruit into batter after blended.
This recipe is easily doubled for a crowd.
