This is the Gourmet/ Epicurious recipe..I sort of followed.
Peaches under Meringue:
2 ripe peaches, halved and pitted
3 tablespoons plus 1 teaspoon sugar, divided (seems like a lot of sugar to me)
1 large egg white
2 tablespoons finely chopped sesame candy or crushed amaretti (?)
Preheat broiler.
Put peaches, cut side up, on a baking sheet and sprinkle with 1 teaspoon sugar (total). Broil 4 to 5 inches from heat until tops begin to brown, 2 to 4 minutes.
Beat egg white with a pinch of salt in a deep bowl using an electric mixer at medium-high speed until foamy. Gradually add remaining 3 tablespoon sugar, beating until white holds stiff, glossy peaks. Fold in sesame candy.
Place a dollop of meringue on each peach half and broil 30 seconds. Turn off broiler and leave peaches in oven just until tips of meringue are browned, 30 seconds to 1 minute (watch carefully).
Meringue in this recipe is not fully cooked........?
I did not have either the sesame candy or the amaretti , did have the peaches and egg white.
Never one to be defeated by a little issue, thought what could I use instead? Ground almonds? Amaretto?
Settled on Amaretto liquor.
Cut peaches in half, did not broil them first.
Lightly sprinkled cut peaches with 1 tsp Amaretto liquor each half, whipped the egg white with only 2 tsp white sugar and 1 tsp. amaretto liquor.
Have to watch those calories...
Baked at 350 for 10 minutes, weren't browned enough for me added 2 more minutes........which cooked the meringue totally ;making the pretty brown tips , the peaches were still firm yet cooked; there was some pinky coloured drippings from the liquor and peach juice that pooled at the bottom of the baking pan ...used that juice on the dessert plate then placed peach on top......
Verdict;Delicious!
