Copabanana Valentine Cupcakes

Sunday I made some cupcakes


for the grandsons school lunches , decorated with Valentine candies.

This is another recipe from Crazy Plates.
In the spirit of February used some Valentine paper cups to line muffin tin. .

Recipe:
2 cups flour
1 tsp. each baking powder and baking soda
1/2 tsp. salt
1 cup sugar
1/2 cup fat free egg substitute or 2 eggs
1/4 cup butter, soft
1 cup mashed very ripe banana
1/2 cup low fat sour cream or vanilla yogurt( used 0% yogurt)
1 tsp. vanilla
1/2 cup mini chocolate chips(used cinnamon chips)
Preheat oven to 350. Spray 13x9 baking pan with Pam( used large muffins tin with paper cups.).
In a medium bowl , sift together flour , baking powder , baking soda, and salt.
In a large bowl, beat together sugar, eggs and butter on medium speed of mixer, add bananas, sour cream and vanilla. Beat til smooth.
Gradually add flour mixture , beating after each addition. Batter will be thick. Fold in chips.
Bake for 25 -28 minutes. Cool and ice with frosting.
Makes 16 servings.
Calories per serving 185.

Banana Frosting recipe:

1/4 cup butter
1/8 tsp. salt
1/2 cup well mashed banana
1/4 cup white vinegar
3 1/2 cup sifted icing sugar
Cream butter and salt, combine banana and vinegar, alternately add banana mixture with the icing sugar Beat til smooth .

Lately I have been on a cupcake rampage! This recipe is going to be tried this weekend. The candies on top are so cute!
