Wednesday- Baked Fries and The Thigh Who loved me.

Here is the weather the grandsons and I experienced on Wed.
Brock is clearing off the cars, getting ready to plow out drive and shovel the sidewalks of 8 inches of snow.
This is Willie in the hot tub and Lisa with Willie at the pool in Punta Cana.

To warm up the boys this snowy day , for supper I used a recipe from Sherry's cookbook, Crazy Plates
for the entree.
The Thigh who Loved me recipe is easy to make, extra tasty and oven BBQ'ed
and even low cal. 287 cal.per serving.
Recipe:
3 lbs. skinless boneless chicken thighs ( breasts can be used)about 12 pieces
3/4 cup ketchup
1/2 cup salsa
1/4 cup honey
1 TBSP.Dijon mustard
1 tsp. chili powder
1/2 tsp cumin
1 TBSP. cornstarch
Arrange thighs in a 13x9 pan.
In medium bowl whisk together all ingredients except the corn starch.
Pour sauce over chicken , turn pieces to coat well.

Bake uncovered at 400, for 45 minutes, if using breasts bake for 30 minutes only.
when chicken done place on serving dish , keep warm. Pour sauce into small saucepan add cornstarch that you have mixed with 1 TBSP. water til smooth. Bring to a boil and cook til sauce is thick. Pour sauce over chicken and serve extra as a dipping sauce.
Makes 4-6 servings.
To go with the chicken made potato oven fries adapted from Ina Garten's recipe in Back to Basics.
Instead of all sweet potatoes used half sweet half white.
Recipe:
2 medium sweet potato, wedged
2 white potatoes, wedged
2 TBSP extra virgin olive oil
1/2 tsp sea salt and pepper each
1/2 tsp. Mrs. Dash's garlic / herb blend
Preheat oven to 450. Place potatoes on baking sheet, toss with oil and seasonings. Bake 15 minutes, turn over Bake another 15 to 30 minutes til golden browned .
To finish dinner a simple spinach salad with bean sprouts, mandarin orange sections, sliced strawberries topped with a dressing made from 1 can sweetened condensed milk thinned with vinegar.

Brock and Brayden devoured these dishes.
The chicken dish is definitely one I will make again.
