Chocolate Dipped Cherries


I love baking at Christmas.
Still with only 2 of us in the house now, not the need to bake dozens of cookies, candies and squares, anymore .
I miss that fun.
Now I have to be a bit more choosy.
Walking thru the Bulk Barn store I spied these stemmed cherries.I remembered that my sister, Donna and her son Chris had made a chocolate covered cherries candy.
Yes , you are right I bought them, could not resist.
Also bought some Callebaut chocolate wafers as well.
Made these delicious treats that are easier than one would think.
Recipe:
20 stemmed maraschino cherries, drained
2 TBSP. soft butter
2 TBSP. corn syrup
dash of salt
1 cup powdered fruit sugar
3 oz. ( 3 squares) semi-sweet chocolate
Drain cherries, after marinating in liqueur of your choice for 1 week( I used Amaretto) ( if you don't want any liquor miss this step).
Mix butter, syrup and salt. Blend in sugar . Knead til smooth, chill if soft.
Wrap about 1 tsp. fondant around cherry, rolling in palm of your hand.
Place on waxed paper covered cookie sheet, chill til firm.
Melt chocolate over low heat til smooth( used the Callebaut chocolate wafers )
Holding by stem dip cherries covered in fondant into melted chocolate.
Place back on waxed paper. Store in covered container in refrigerator
Makes 20 to 24
Use with in 2 weeks.
These candies are very decadent and rich but add a very elegant look to a cookie tray.

Bonus with the left over chocolate I made a peanut bark.
Sprinkled redskin peanuts on waxed paper sheet.Poured the remaining chocolate over.
2 treats for my Christmas cookie tray!

Sometimes I wonder if it's healthy... visiting your site! Esp. since I always seem to find an (indulgent) new recipe to try! ha! These look wonderful and I intend to try it. :-)
