Frozen things tend to leak water when they thaw. Changing the size of the pan might also affect the consistency, if it made the custard part thicker it might not have set like it should have. Changing the fat content of the milk might have had a texture difference, but I suspect the first two are your main problems. The only thing I can think of for the meringue flattening is that there was some extra water that got introduced while you were whipping the egg whites?
